A versatile and often overlooked vegetable is the spaghetti squash. This star of the vegetable kingdom has the personality to be either a flavorful accompaniment or a savory main course. Packed with nutrients, this veggie is the ideal replacement for pasta. All members of the family will be clamoring for seconds.

Preparation can be done in a variety of ways dependent on time. For the family on the go, the microwave provides an easy method for cooking spaghetti squash. A long knife with a substantial handle is needed to penetrate and slice the shell in half length wise. The seeds and slimy flesh must be removed. It’s similar to processing a pumpkin for Halloween, with less mess. Place in the microwave at the high setting. Nine minutes on high should be a jumping off point. Separate flesh from the skin with a fork and toss with sauce.

Roasting is an option that tends to bring forth inherent flavors. A slight coating of oil with a dusting of salt and pepper is all that is needed. 400 degrees for 50 minutes is a good jumping off point. The flesh should be fork tender. The key to this time intensive method is to use a sauce that highlights the flavor. Too often a heavy or tomato based sauce will overpower this. Garlic with either butter or olive oil will enhance all that is good with this dish. A little grated cheese is also good!

Veggies can also be given the parmesan treatment. This classic approach is for those who yearn for an Italian main dish that is also easily prepared. Oven baking is vital in achieving a uniform heat. A lower temperature than roasting is required. A pan with a slight amount of water in it is needed to provide humidity. An hour is usually a good estimate for this method. The flesh is taken out of the shell and shaped into patties. Top with a favored marinara sauce. Place back in the over to gently nudge the sauce to the desired warmness. Place the cheese over it until gooey heaven glistens back at you. The family will tear into this.
